I’ve always been sceptical about cooking steak ‘dirty’ despite many bbqers stating that this is the best way to cook a steak. For those of you not familiar with this method – Rest assured, cooking a steak ‘dirty’ doesn’t actually involve any dirt. It actually means that instead of cooking your steak on the bbq’s grill, you place the steak directly onto the coals. Now if you’re anything like me, when I first heard of ‘dirty steaks’ you’ll be thinking a few different things. Why? Wouldn’t it burn? Wouldn’t it get covered in charcoal and ash? I’ll answer those questions for you now. Continue reading MY FIRST DIRTY STEAK
I don’t know about you but sometimes it’s hard to justify using a full chimney of charcoal for just a couple of steaks. This is why many of us serious about outdoor cooking have more than one BBQ at our disposal depending on the circumstances. I already have my cheap but cheerful barrel grill and my UDS. I love them both but they are large and fuel hungry. Realising that I needed a more compact and efficient BBQ for the smaller cooks I decided to add a new member to the family.
Have you ever heard of reverse searing? No? Then this is the best thing you’ll learn today. Yes? You probably already know everything I’m about to say but by all means, read it anyway.
If like me you love steak, you probably believed you could cook a pretty incredible steak already. You’re probably right but this method of cooking your steak will definitely take your steak to the next level. To cook this steak I adopted two new techniques picked up from the incredible community over in the CountryWoodSmoke Facebook group. Dry brining and reverse sear. If you are at all interested in BBQ and good food I seriously suggest you go and join that group. Let’s start with preparing the steak. Continue reading Reverse Sear Steak
This is not really an instructional post. After all… It is just a steak. I still wanted to tell you about it because I enjoyed it so much!
This was a piece of Welsh rump steak bought for just £2.97! No idea why it was that cheap. May have been reduced, may have been on offer but I grabbed it anyway. I was too excited to notice, to be honest. I’ve cooked good steaks before. I know all the rules – oil and season the meat, allow the meat to reach room temperature, place on to a really hot pan and don’t move it around too much. This time, I decided to try something new and use a herb brush to butter the steak. I wasn’t sure how much flavour could really be added to the meat by simply brushing it with butter using a herb brush, but it was brilliant! I am guessing that this is not new for many of you, but there might be a few people that are yet to try this and I seriously suggest that you give it a go. Continue reading Cooking: Awesome Steak!
A bit of fun today. Nothing too serious 🙂
Now and again I drift off into my own little world. My imagination runs wild and the world is for the taking. Suddenly I can imagine a life where I can make all my dreams come true! Start my own business, write a book, travel the world or cook something so incredible that people queue hours to eat at my restaurant. Perhaps it’s hope more than anything but I think we all have these moments and it’s great! At least I hope so or I am starting to sound very strange. Our imagination makes everything possible so why not right?
Well today I had one of these moments. It started with me just thinking about what I fancied to eat. Then I thought about what I might have if I could have anything I liked. Doesn’t matter where from or who cooked it…. I could ask for it and it would be here. I had trouble choosing and so I started to think about what it would be like if I could eat all my favourite food, everything I have ever tried and loved or am yet to try in one place. One unbelievable, mouth watering and perfect restaurant.
Sounds great right?! I bet your starting to think about what you would choose right now.
So this is my ‘review’ of the Exotic Meat Kebab from The Stuffed Dormouse in Caerleon. This was actually a Christmas present to me from a friend. I can’t say that I have ever tried any of the exotic meats on this menu so it was definitely an experience.
First of all lets have a look at what is on offer:
“We offer various exotic meats including:
If you are feeling adventurous you can sample a piece of each of the exotic meats on our famous King-size Skewer.
All of the exotic meats are served with salad and a choice of potatoes.”
