Lamb Shoulder Tacos & Pork Shanks

I love smoking! There’s something about the smell of smoke in the air that makes me hungry and that didn’t happen before my passion for outdoor cooking to hold. On this day I’m smoking lamb shoulder and pork shanks. I’ve smoked lamb shoulder a few times and it’s always fantastic. This time I decided to pull the lamb shoulder for tacos which is slightly more unusual for me. Even more unusual are the pork shanks. Never cooked them. Never eaten them. Decided to cook them similarly to the lamb and see what happens.

Lamb Rump on the Thuros T1

This post has ended up being a demonstration of how to make the most of a bad situation.  I had some fantastic lamb rump in a Mediterranean marinade from Chris Hayman Butchers ready to cook on the barbecue.  For some reason I had decided that I would cook this on the Thuros T1.  Soon after starting I realised that this wasn’t going to plan.

Butterflied Lamb Leg & Prawns Surf n’ Turf

This was one of those cooks where everyone at the table said they wanted this again soon.  Simple but utterly delicious.  There’s not much better than a lamb leg cooked hot and fast on the bbq to medium rare/ medium hot.

New BBQ: Thuros

I don’t know about you but sometimes it’s hard to justify using a full chimney of charcoal for just a couple of steaks. This is why many of us serious about outdoor cooking have more than one BBQ at our disposal depending on the circumstances. I already have my cheap but cheerful barrel grill and my UDS. I love them both but they are large and fuel hungry. Realising that I needed a more compact and efficient BBQ for the smaller cooks I decided to add a new member to the family.
