Whole Sea Bass and Chips

This was a first for me.  I have cooked fish on the BBQ before.  Salt Block Cod, which was rather unsuccessful, and Scallops in their shells, but I have never cooked a whole fish.  To be honest I just didn’t really think that I would like it.  No good reason.  Not sure what I imagined would be wrong with it but it was about time that just gave it a chance.  So… whilst doing some shopping for that weeks meals I picked up a whole Sea Bass.  Nothing huge but hopefully a great introduction to cooking whole fish on the BBQ. Grilled Steak, Looftlighter and FryLight

So this cook was about experimentation.  Nothing that exciting but nevertheless… an excuse to fire up the BBQ.   I’ve done a few dirty steaks lately and although I do love cooking steaks that way I thought I would do something different today.  Back to the days where dirty steak was something I was still sceptical of.  In order to do this I knew that I wanted the charcoal and the grates to be as hot as possible.  Whats the best way to do that?  Looftlighter! New BBQ: Thuros

I don’t know about you but sometimes it’s hard to justify using a full chimney of charcoal for just a couple of steaks. This is why many of us serious about outdoor cooking have more than one BBQ at our disposal depending on the circumstances. I already have my cheap but cheerful barrel grill and my UDS. I love them both but they are large and fuel hungry. Realising that I needed a more compact and efficient BBQ for the smaller cooks I decided to add a new member to the family.

The Reigniting of my Passion for Barbecue and Smoking.

I haven’t posted anything to my blog for a very long time.  My domain had expired and my drive to write anything had disappeared.  I have loved barbecue food for a long time but my ignorance meant that I didn’t make the most of what I had.  Although I have a large Weber Mastertouch at my disposal – I mistakenly believed that they could only be used for grilling.  I think most of the UK public incorrectly hold a similar view.  What I really wanted to do was smoke some meat but I couldn’t afford to buy a dedicated smoker.  After watching videos of Frankin BBQ on Youtube I was sure that an offset smoker was the way to go.  I even tried to build my own filing cabinet smoker but it just didn’t work (despite the popularity of the post) and I gave up.  The dream of smoking the all mighty brisket at home was all but guaranteed never to happen.   Continue reading The Reigniting of my Passion for Barbecue and Smoking.

The Stuffed Dormouse: Exotic Meat Kebab

So this is my ‘review’ of the Exotic Meat Kebab from The Stuffed Dormouse in Caerleon.  This was actually a Christmas present to me from a friend.  I can’t say that I have ever tried any of the exotic meats on this menu so it was definitely an experience.

First of all lets have a look at what is on offer:

Buffalo Steak

Camel Rib-eye

Crocodile Fillet

Llama Steak

Ostrich Steak

Reindeer Fillet

Springbok Steak

Zebra Steak

If you are feeling adventurous you can sample a piece of each of the exotic meats on our famous King-size Skewer.
