Super Quick Scallops in the Shell

This is only the second time I’ve cooked scallops.  The first time I’ve cooked scallops in their shell.  The method I’ve used today is extremely simple but wow did these taste good!  I know a lot of people aren’t sure what to make of scallops but trust me, if they are cooked well, they are unbelievably tasty. The Benefits of Good Charcoal: Sweet Green Chilli Pork Shoulders

What charcoal do you use when you barbecue?  Whatever you can find in the supermarket?  Maybe you’re more bbq savvy and use brands like Big K instead.  Have you ever thought about looking for a local producer of charcoal? No?  I think you should give it a go and here’s why. Continue reading The Benefits of Good Charcoal: Sweet Green Chilli Pork Shoulders

Reverse Sear Steak

Have you ever heard of reverse searing?  No?  Then this is the best thing you’ll learn today.  Yes?  You probably already know everything I’m about to say but by all means, read it anyway.

If like me you love steak, you probably believed you could cook a pretty incredible steak already.  You’re probably right but this method of cooking your steak will definitely take your steak to the next level.  To cook this steak I adopted two new techniques picked up from the incredible community over in the CountryWoodSmoke Facebook group.  Dry brining and reverse sear.  If you are at all interested in BBQ and good food I seriously suggest you go and join that group.  Let’s start with preparing the steak. The Reigniting of my Passion for Barbecue and Smoking.

I haven’t posted anything to my blog for a very long time.  My domain had expired and my drive to write anything had disappeared.  I have loved barbecue food for a long time but my ignorance meant that I didn’t make the most of what I had.  Although I have a large Weber Mastertouch at my disposal – I mistakenly believed that they could only be used for grilling.  I think most of the UK public incorrectly hold a similar view.  What I really wanted to do was smoke some meat but I couldn’t afford to buy a dedicated smoker.  After watching videos of Frankin BBQ on Youtube I was sure that an offset smoker was the way to go.  I even tried to build my own filing cabinet smoker but it just didn’t work (despite the popularity of the post) and I gave up.  The dream of smoking the all mighty brisket at home was all but guaranteed never to happen.   Continue reading The Reigniting of my Passion for Barbecue and Smoking.

“New” Camera. Olympus OM10

So I bought a “new” camera a week or two ago.  The Olympus OM10 35mm camera.  I don’t know how many of you still use 35mm film but I can tell you it isn’t too cheap.  Although the camera itself cost me around £60 (can be much less but I liked this tan version) including delivery – the film and developing of that film is quite expensive.  The 35mm film itself can cost £5 – £7 per roll.  I managed to get a pack of 20 for £10 which is pretty excellent considering.  The developing of this film will cost me £5 per 35mm film if I would like it scanned to a CD.  In the future, I plan to purchase my own film scanner saving me money in the long term.  Film developing would then only cost £2.50 per roll.  Still much more expensive than digital photography.

So why would I choose to use this camera? Continue reading “New” Camera. Olympus OM10

New Direction (Sort Of)

Lately, I have struggled to write new content for the blog.  I have been busy.  Life gets in the way sometimes but I have also come to the realisation that I need to post more regular content in order for the blog to be in any way interesting.  Unfortunately, posting regular reviews of restaurants etc seems unachievable.  You should still expect to see reviews, personal posts and the occasional piece of news but the focus will change.  Mainly, I don’t have the budget to eat out regularly.  However, I do love to cook and try new things.
