I have tried a few rubs over the last few years. One of those I’ve wanted to try since it was released is the House Rub by Marcus Bawdon, CountryWoodSmoke. Being a part of the fantastic CountryWoodSmoke Facebook Group, I’ve seen many people describing how brilliant it is. So I bought a chicken, portioned it up and gave it a go. This is how it went.
Originally, I planned to spit roast this chicken on the Jumbuck Rondo Rotisserie. Pushed for time and eager to try the rub I decided that I would portion the chicken instead. The rub is very fragrant and just smelling the rub lets you know how brilliantly it will flavour the meat. The ingredients in the rub are as follows: Sugar, Sea Salt, Black Pepper, Garlic, Smoked Paprika, Chipotle Chilli, Basil, Savory, Oregano, Rosemary, and Tarragon. The rub has seems to me as though it has it’s roots in the classic BBQ rub with a herby twist. The tarragon in particular shining through. The combination of herbs and spiced here are perfectly blended and you couldn’t really ask much more from a rub.
