This has been one of my favourite cooks recently. Although the peppers and chicken have been grilled, all of the other ingredients are fresh and crisp. With our current spike in temperatures, this fresher Mexican option has definitely been a big hit.
The boned chicken thighs were marinaded for a short while in some spices including paprika, chilli, cumin, garlic powder, onion powder and chilli flakes. First I cooked them indirect for a few minutes and then direct to get some nice crispy edges. Now admittedly I haven’t made my own tortillas. Maybe sometime in the future I will, but on this occasion I settled on shop bought tortillas toasted over the flames for around 30 seconds each side. Every one puffed up and turned just a little crisper with some nice toasted flavours. Really makes a huge difference to the overall texture and taste of the tortilla. To serve, I placed a selection of ingredients in a tray for everybody to build their own tacos. Ingredients were chilli, onion, avocado, coriander, cucumber, shredded lettuce, tomato, pickled red cabbage, lime wedges, sour cream, and siracha. A loaded taco could be a little messy but definitely tasty.
If you like Mexican food but normally stick to the usual suspects. Tacos are definitely one to try. Have a go and let me know what you think.
